What to Cook for Dinner

There’s something about cooking that just feels good. Maybe it’s the act of taking raw ingredients and turning them into a delicious meal. Or maybe it’s the satisfaction of feeding yourself and others. Whatever the reason, cooking is a great way to show your loved ones that you care.

However, as we get older, cooking can become more difficult. Arthritis, vision problems, changing taste buds, and other age-related issues can make it hard to enjoy cooking like we used to.

That’s why we’ve compiled a list of our favorite senior-friendly recipes. These dishes are easy to make and don’t require a lot of time or effort. So whether you’re cooking for yourself or for a group, we hope you’ll find something on this list that you’ll enjoy.

One-Pot Chicken and Broccoli Pasta

This dish is healthy and hearty, and you only need one pot to make it! Not to mention, you can easily adjust the ingredients to suit your taste.

Ingredients:

  • 200 grams of cooked chicken, cut into small pieces
  • 1 cube of chicken stock
  • 2 cloves of garlic, minced
  • 250 grams of broccoli, cut into small pieces
  • 180 grams of pasta
  • 1 lemon, juiced
  • 150g creme fraiche
  • Grated parmesan
  • Olive oil

Instructions:

  1. Fry the chicken and garlic for a few minutes in a large pot.
  2. Pour in about 850ml of water into the pot and add the stock cube and pasta. Bring to a boil and allow to simmer for around ten minutes until the pasta is cooked.
  3. Stir in the broccoli for the last few minutes of cooking.
  4. Once everything is cooked through, add the creme fraiche and stir.
  5. Remove the pan from the heat and add the lemon juice. Give it a good stir and top with grated parmesan cheese. Serve hot.

Roasted Salmon with Potatoes and Asparagus

This is a simple and elegant dish that’s perfect for a special occasion. The salmon is cooked to perfection, and the potatoes and asparagus make it a complete meal.

Ingredients:

  • 150g salmon fillet
  • 200g new potatoes, cut into small pieces
  • 2 cloves of garlic, minced
  • 200g asparagus spears, trimmed
  • 1 medium lemon
  • 2 tbsp. balsamic vinegar
  • 1/2 tsp. mustard
  • 3 tbsp. olive oil
  • Salt and pepper

Instructions:

  1. Preheat the oven to 200C.
  2. In a small bowl, mix together the garlic and olive oil.
  3. In a bigger bowl, place potatoes and add a tablespoon of the oil mixture and half a teaspoon of salt and pepper. Toss to coat and spread the potatoes on a baking tray. Roast in the oven for 20 minutes.
  4. Next, add the asparagus spears to another bowl, drizzle with a little bit more of the oil mixture, and toss to coat. Add 1/4 teaspoon salt and 1/8 teaspoon of pepper. Roast with the potatoes for another 3 minutes, just until the asparagus is bright green.
  5. With the remaining oil mixture, coat the salmon fillet and season with salt and pepper. Push the potatoes and asparagus to the side of the baking tray and place the salmon in the center. Tuck thin slices of half of the lemon all around the salmon and vegetables.
  6. Roast for 5 minutes, or until the salmon is cooked through.
  7. While the salmon is cooking, mix together the balsamic vinegar and mustard in a small bowl.
  8. When the salmon is done, drizzle the sauce over it before serving. Serve with the remainder of the lemon cut into wedges. Enjoy!
